Chill Grill started in 2016 when chef Marco Vargas took a beat-up 1972 step-van, painted it olive green, and started serving smash burgers outside a downtown bar on Friday nights. Word spread. Lines formed. The truck grew.
Today, Chill Grill is a rolling kitchen of five, parked at breweries, festivals, and street corners across the city โ still cooking everything over open hardwood flame.
